This poppy seed cake is called “piegusek” in Poland. The word means a person who has many freckles. Piegusek is one of cakes which are typical for Christmas in Poland. Another very popular cake with poppy is called makowiec (“a poppy seed roll”). You can check it here: Makowiec
Baking piegusek is literally a piece of cake😀 Really, after a few minutes, you will be watching your cake rising in the oven.
- 300g flour
- 2 tsp baking powder
- 100g sugar
- 250g butter
- 4 eggs (separated egg yolks and egg whites)
- 2 tsp almond/vanilla extract
- 1 cup milk (250 ml)
- cca. 150g poppy
Mix the yolks, butter and sugar with an electric mixer until light and fluffy.
Add flour, baking powder, poppy, milk and almond extract. Mix with the electric mixer again.
Whisk egg whites until stiff peaks form. Gently transfer about 3/4 of the beaten egg whites to the batter. Mix just with a spoon (to keep the batter fluffy and airy).
Bake it for 35-40 minutes in the oven preheated to 180°C (360°F). I used a pan from Nordic Ware (22cm – 10 cups capacity).
